Recipe - Adult dessert

Ok,

I had the craving for a strawberry banana salad, like I used to get when my Grandparents would take me to Furr's Cafeteria. So I picked up the berries and the nanners, and added a 1/8 cup of sugar and 1/2 tsp of vanilla. My kids went nuts over it.

I go to thinking, hmmmm.. I have some Vanilla Rum.. so I made the same recipes and added a splash of vanilla rum and a pinch of salt. My wife and I thoroughly enjoyed this "adult" treat. Next time I will add some crushed mint.

Recipe:
Strawberry & Banana Salad

1/2 lb of Ripe Strawberry sliced
2 med bananas sliced
1/8 cup sugar (or sweetener)
1/2 tsp vanilla

Adult version: replace vanilla with vanilla rum, and add a pinch of salt.

spoon into a champagne glass and enjoy!

Recipe - Baby Spinach and Apple Salad

Baby Spinach and Apple Salad

2 cups Baby spinach
1 medium apple (I prefer red delicious) cored and sliced thin
Your choice of vegetables:
Radishes - sliced thin
Zucchini or Yellow Squash - julienned
Red onions - sliced thin
Jicama – sliced thin

Or any combination of vegetables.

Dressing:
2 tblsp Raspberry or Strawberry jam
¼ cup balsamic vinegar
½ cup Canola or Olive Oil

Whisk jam and vinegar together, add oil to mixture. Whisk dressing to emulsify, serve on the side of the salad.

Also makes a great dip for the kids to dip their spinach leaves in.

Recipe - Vidalia Pork Chops w/ Baked Potato Salad

Vidalia Pork Chops w/ Baked Potato Salad

Pork Chops:

4-6 ¼ lb pork chops

½ cup Vidalia Onion Vinaigrette Dressing

Salt & Pepper

Potato Salad:

4-6 medium potatoes baked or boiled, cooled

Dill pickle relish

Diced onions

½ cup mayo

½ cup Vidalia Onion Vinaigrette Dressing

1 cup shredded cheese

Bacon Bits (optional)

Salt & Pepper

¼ cup water

Making the potato salad:

I prefer to bake the potatoes in the microwave in a stoneware fluted pan (from Pampered Chef) I pierce them several times and stand them up in the fluted pan and put them in the microwave for about 15 minutes (depending on the microwave). Once the potatoes have cooled, cube them.

Placed cubed potatoes in large bowl and add relish, onions, bacon bits and cheese.. Mix mayo and onion dressing with water and a pinch of salt and pepper. Taste to make sure it has good flavor. Pour dressing over potatoes, mix thoroughly.

This is an excellent potato salad as a side dish.

Making the pork chops:

Place chops in a shallow dish. Salt and pepper each side. Cover chops with onion dressing on both sides.

Place pork chops in stoneware baking dish, and put in 400 degree oven for about 20 minutes.

Take chops out of the oven, and cover with the potato salad. Place back into oven for additional 20 minutes.

Remove from oven and let cool about 15 minutes, serve with a salad.
